Grains of Paradise are a very intriguing spice that is technically related to cardamom, but have more of a pepper flavor. Hot, pungent, and spicy with a defined cardamom flavor. Grains of Paradise are an aromatic seed with a peppery hot taste that makes a superb substitute for black peppercorns. Commonly referred to as Alligator Pepper or Melegueta Pepper, the gourmet grains of paradise are grown in Africa and provide a warm, spicy bite with slightly bitter overtones. Its use is generally confined to West African cookery, though it may also find its way into Moroccan Ras el Hanout combinations.
Today, Grains of Paradise are popular in spice blends and for flavoring alcohol. Brewers love these unique grains because they won’t overpower brews and are easier to control than powerful flavored peppercorns. In addition, alcohol has a fine way of bringing out the wilder flavors of Grains of Paradise.
