Our New Mexico Hatch Chile Powder is made by grinding whole dried New Mexico chiles. The New Mexico chile has a thin flesh and an earthy chile flavor with notes of wild cherries. It has a unique flavor—mildly spicy, slightly smoky, and a little fruity.
New Mexico Chiles are frequently mistaken for the Anaheim Chile Peppers or California Chiles. New Mexico chiles are visually similar to Anaheim peppers but they have a different texture and are a bit hotter. They’re also considered more flavorful than the California Chiles.
